Recipes for old bananas?

Bananas. I used to like them overripe, but these days my bananas have to be yellow with few spots or I don’t enjoy them. That said, I have 3 overripe bananas and one in the freezer from last week. Apparently, I need to buy a few less at the store this week! So, I am debating between a few banana recipes. I used to make banana bread all the time but one day, Joe burst my baking bubble when he told me he doesn’t really like banana bread. The horror! So I began investigating other banana recipes. I tend to not like some baked goods with banana flavor (other than banana bread, of course) so I want something that won’t be overpowered by banana.

Here are the front-runners. I won’t have time to do the baking until later tonight, so it will give me some time to think it through!

Clearly, banana brownies are the front runner. What ever shall I bake???

And the winner is… Dark Chocolate Banana Bread!

I ate two before taking the picture. Oops!

Turns out Joe does like banana bread. I made muffins and halved the recipe because I didn’t want 30 muffins. I added 1 TBSP cocoa powder and used chocolate chips and PB chips, because this is what I had. I also just used the egg white since I was halving the recipe and it is hard to half an egg without just separating it.  And I baked them about 20-22 minutes. Love them! Thanks to PB boy!
